HuAvas

I know that the name of this recipe may seem odd, and this isn't an Italian recipe but stay with me.

One night I got a craving for Huevos Rancheros. And as I have mentioned before, I like to get creative with my recipes so from there I came up with HuAvas, named by my daughter Ava. She helped me make this the first time.

I work full time (40+ hours a week plus commute) and have three kids, so a simple recipe is appreciated. This is really easy to make and a family favorite.

You can adjust the ingredients as you'd like. My family can eat A LOT.

HuAvas
10-12 Eggs
Salt & Pepper to taste
1 Tbsp Sour Cream
1/2 of a Green Pepper- diced
Onion to taste- diced
2 Tbsp Olive Oil
1 Can Black Beans (drained & rinsed)
1 Can Corn (drained & rinsed)
1/2 Cup Crushed Tomatoes
1/2 Cup Salsa
Shredded Cheese
Frito's or Tortilla Chips

1. Heat olive oil in a deep skillet
2. Chop/Dice the green pepper and onion. I don't like a lot of onion, and would probably use 2-3 tablespoon or so. Add to oil in the skillet. Let the pepper and onions saute until they begin to brown.
3. Meanwhile, crack eggs into a large bowl and add sour cream, salt, and black pepper to taste. The sour cream makes the eggs fluffier than milk.
4. Once the peppers and onions are browned add the eggs to the skillet and scramble.
5. When the eggs are cooked completely add in the black beans, corn, tomatoes, and salsa. Stir together and cook for 10 minutes until heated through. You can adjust the ingredients to your taste.
6. Add cheese and sour cream to the top of it or individual bowls. We love cheese around here so we use lots of it!

You can eat this with a fork or as a dip with Frito's/Tortilla Chips. This reheats well for lunches through the week. You can also add meat, like ground beef, to this if you'd like.
